1 cup/250g white sugar
2 cups/500 g of all-purpose flour
1 cup (2 sticks)/250g of butter-softened
+ 1 egg yolk for the egg wash
In a large bowl, add sugar and flour together and use a whisk to blend together... Add the egg and stir with a wooden spoon to incorporate into the dry mix... add the butter last and and mix together with your hands, without "working the dough too much. The dough will be firm yet soft so you can put it in the refrigerator to chill it so it will be more idea for shaping with cookie cutters.
Shape into round cookies with the cookie cutters of about 1 cm/1'4 inch in thickness and then gently brush the tops with the egg yolk... you can make "stripes" with a fork on the top... and finally sprinkles (if you like)) toasted slivered almonds. Place on a cookie sheet (lined with baking paper).
Place in the oven for about 25 minutes at 190 °/375F- Keep an eye on them to make sure they don't brown or burn! (they should be a nice golden brown colour.. and they become very hard/crunchy- but this is how they are supposed to be!!
**My oven is a bit different so I baked them at a slightly lower temp (350F) but baked them longer and kept an eye out to make sure they didn't overcook. A DELISH-LY rich and buttery cookie!! YUM!!!!
