My Mom... It was 2 years ago but it feels like forever!

Two years ago today, my mom took her last breaths and left this world. We were all with her and she is at Peace now. I will see here again, one day!

My Mom! My mom is Louise. My mom is beautiful, loving and kind. My mom is brave, strong and inspirational. My mom is special to me because she gave birth to me on Nov. 28, 1965. She nurtured me and raised me to be the special woman I am today. She supported me, put up with me, listened to me, gave me good advise, and loved me unconditionally. She was always kind and funny!! I LOVE my mom very much....

Dear Mom, I wanted to let you know how much I miss you and that I think about you all the time... day and night! It's so hard to be without your beautiful smile, loving words, and warm hugs. You live on in my thoughts and in my heart. You are everything to me. You are the best mom EVER and you have always been there for me. I LOVE YOU MOM!! Love, your one and only daughter, Leese

Pumpkin Bread

Here goes the Pumpkin Bread recipe that I have made several times already and it is EXCELLENT!!! I got the recipe from Diana's Kitchen. The picture was taken from Gifts of Flavor.

Tina's Pumpkin Bread

  • 1 1/2 c. flour
  • 1/2 tsp. salt
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1 c. pumpkin puree
  • 1/2 c. vegetable oil
  • 2 eggs, beaten
  • 1/4 c. water
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. cloves
  • 1/2 c. chopped nuts (optional)
Preheat your oven to 350. Sift together the flour, salt, sugar, & baking soda. In a separate bowl, combine the pumpkin, oil, eggs, water, & spices. Pour into the bowl w/ dry ingredients & mix just until all are combined - don't stir too much! Stir in the nuts, if you're using them (I like it better w/o the nuts). Pour into a well-buttered 9x5x3-in. loaf pan, bake 50-60 minutes until done in the middle. Remove from pan, cool on a rack.

Keep wrapped in the refrigerator. Really good w/ cream cheese, or chopped walnuts in cream cheese.

Pecan Pie.. It turned out fine!

WHEW... here is the pecan pie as it came out of the oven... Everything turned out fine the second time around, by the way!!

UPDATE on damage control!!

Yes... indeed I was supposed to use the sable' not the flueillte'!! OOPS! So, I took off the pecans, scooped the filling into a bowl and TORE our the crust from the pan... But now I have to go to work in about 30 minutes so I will have to redo it tonight... I am going to make another recipe of the filling just to make sure... bake it in the new crust and then stick the nuts on the top when it is almost done... Keep your fingers crossed!!!

Just made my cranberry sauce- YUMM!!! and the pecan pie-- YUMMM!!! OOOPS!!
I used the WRONG crust... I used the crust for quiche and it's salty!! AIEE!!! I just took it out of the oven... I am going to run to Franprix to get some sable' crust and see if I can gently transfer the filling... WISH ME LUCK!!!!

On a fete' l'anniversaire

de Frederique et moi aujourd'hui avec des copines et ma belle mere!! C'etait SUPER CHOUETTE!!! I had such a nice time just hangin' with the girls today! First, we met at the gare d'Antony at noon and walked through the marche'. Then, we headed over to a cute little sandwicherie in the center of town. There was a line out the door when we first arrived and so we went inside to grab a table before waiting in the line to order! The owner, a good-looking French man was giving us the "eye" as if to say... Hey, what do you think you gals are doing, just coming in and sitting down like that (we were 7, by the way). It may have looked like we were expecting table service... but I thought that maybe he thought we were cutting in front of everyone to get a table.. I really don't know how these things work... since I had never been there when it was so crowded! So, when he started to tell us (in French) that we should wait in line to order... I thought he meant that we had to give up the table and wait in line and THEN sit down!! AIE!! But, what he really meant is that that we were okay there but that we would have to queue up to order.. Oki, fine.. that was no big deal..but WHEW!!! For a moment, I thought we were committing a big French no-no!! I actaully blurted out to him.. "But, it''s my birthday and I brought my friends here to celebrate with me," hoping that he would let us keep the tables.. I guess it was just my misunderstanding... maybe he was trying to be funny, too.. as we would find out later on... Anyways, we were offered another spot in the place.. that was NOT right in the middle of everything... and MUCH more quiet and calm then the tables we had picked. A nice female worker was the one who asked one of my friends if we would prefer the
quiet corner, instead... She even brought us an extra chair!!! How nice!! We ordered or food... which was VERY good... and sat down to lunch, talking and enjoying eachother's company!! The patron came by several times to ask how we were doing and to joke around a bit.. he was pretty nice and jolly... I one of the workers if we could eat our dessert (the mocha cupcakes I made) there... I asked first to make sure since we were eating in a place.. usually you can't bring in outside food... esp. since they served some desserts there already.. The guy replied very cheerfully, "Mais oui, bien sur!!" I offered on to the patron and he said, "Oh no, I can't.. it's for your friends." Then when we lit up the candles, he turned out the lights in the resto and had EVERYONE who was eating there sing JOYEUX ANNIVERSAIRE!!! It was SOOOOO COOOL!!!! I was touched!! He came back to our table and asked if we would like coffee... He took everyone's orders... and said, "je vous invite." I thought it was just for me and Frederique (we being the b-day girls and all)... but at the very end of it all.. I went up to pay for the coffee... and he said, "No, don't worry about it... I have invited you all!" I was touched again!! SOOOO NICE!!! What a great way to spend my b-day!!

I'm staying HOME for dessert!!

I made Mango Sticky Rice, my FAVORITE Thai dessert! And it was SOOOOO easy and SOOOO delish-ous!!!! 5 Stars!! Alex loved it, too and it was the very first time he has ever tried it!

Our LOVELY Parc de Sceaux

This is by FAR, my favorite parc in Dept 92! It reminds me of a smaller Central Park, but it is still quite big! You can easily pass the day walking through the park. It is very beautiful right now with the leaves changing colours! I went last week with my friend from Sceaux and fellow San Diegan, Barbara!

The EXCITEMENT has ended!!

Well, the excitement is ALL over...

NOPE! I am NOT talking about the strike in France, unfortunately! I am talking about today, when I went back to the hospital to get my
stitches out! It was pretty painless and the docs were very nice and joked around with me and thought it was funny that I was taking pictures for my blog as the one doc took out the stitches.
This was my arm a few days after the tetanus shot!! OWWWWWW!!! It's no longer red but there is a little knot still on the muscle!!! The doc said it will be there for about a month but the good news is that when Alex bumps up against it it no longer hurts and I can sleep on my left side!

Here is me being a good patient as the doc took the stitches out- which, by the way-did not hurt at all. The funny thing was when I entered the room and I asked if it would hurt as much to get the stitches out as to put them in.. i.e. did I need anethesia.. I think the one doctor thought this was funny because he told the younger one, pictured taking out the stitches... "She needs a lot of hugs because she is scared!"
I thought this was funny.. though... I am ALWAYS scared when I have to go to the hospital... Afterwards, I proudly showed off the scare on my knee where I had 2 knee surgeries for a broken knee back in '96!! Both of the docs agreed with me that the knee scare was A LOT bigger than the little one on my finger!! Hehehehe!!

Broccoli tomato quiche was on the menu at home last Friday! P.S. This was the same night I cut my finger and got 4 stitches!!

Lebanese Cuisine!

This is my vegetarian dish at the Lebanese resto down the street from us. The food is DELISH and the owner is super nice!
